At the hotel’s energetic Bar & Billiard Room (BBR), Chef de Cuisine Natalino Ambra presents a riveting winter menu, which includes highly sought-after winter truffles.

Elevated with traditional Italian cooking techniques, this is an epicurean dining affair that captures the essence of Italy, while immersing guests in the charming heritage of BBR.

For the ultimate Italian dining affair, indulge in the BBR Tentazioni menu (SGD 158++ per guest), which is a curated menu featuring seven handpicked creations. A fine selection of Italian and French wines can accompany the menu (SGD 118++ per guest). At lunch, guests may opt for a 2-course (SGD 48++ per guest) or 3-course (SGD 58++ per guest) menu.

From the exquisite selection of antipasti, relish the fresh flavours of Carpaccio di capesante, featuring scallop carpaccio perfectly seasoned with celeriac, a hearty root vegetable that is often used in winter cooking, winter citrus, and Kristal caviar for an added touch.

Delight in Millefoglie con ricotta, a light as air puff pastry that is classically applied to desserts. Chef Natalino’s savoury take is a delicious combination of ricotta cheese, mushrooms, and decadent black truffle.

For main courses, Chef Natalino presents his versatility and innovation from handcrafted pastas, fresh seafood, savoury meats, and wood-fired pizza.

Winter specials include Spaghetti di Gragnano al nero di sepia, a classic favourite pasta from Southern Italy cooked with squid ink sauce along with tender and juicy slow-cooked cuttlefish; and Costina di manzo, a warm hearty dish that is perfect for cold winters.

The braised wagyu beef short rib is accompanied by an array of texture, flavours, and colours from pumpkin and winter vegetables, topped with black truffles.

Wrap up the indulgent dining experience with a delightful selection of signature desserts, like Variazione di cioccolato, featuring rich Napoleon chocolate paired with a crispy tuile for notes of caramel, complemented with Oabika sauce, a cocoa fruit concentrate which delivers subtle notes of berries, and Monte Bianco, or Mont-Blanc. The intricate dessert is filled with fresh chestnut cream to be enjoyed with vanilla ice cream and the citrus notes of sudachi.

Aperitivo Specials at Bar & Billiard Room

Established in 1896, BBR is a social space for the city to gather and enjoy. Relax in the energetic indoor bar or the breezy al fresco patio and enjoy curated Aperitivo Specials between 6pm and 8pm from Thursday to Monday.

Pick from a refreshing selection of classic aperitivo cocktails priced at a special SGD 18++ each, or sip on the taste of Italy with selected white and red wine labels at SGD 15++ per glass. These delightful specials are paired harmoniously with a complimentary Italian canapé with every glass ordered.

Guests may also opt to indulge in a selection of Italian and French wines starting from SGD 98++, accompanied by complimentary cold cuts and cheeses for every bottle purchased, perfect for celebrations and convivial get-togethers.
