Memoirs of Nanyang, at 藝yì by Jereme Leung, showcases flavours of Southeast Asia and their connection to Chinese cuisine

This month, from October 22 to 26, 藝 yì by Jereme Leung at Raffles Hotel Singapore invites guests to discover an exclusive menu, Memoirs of Nanyang, curated by MasterChef Jereme Leung as he makes a return to Singapore.

Memoirs of Nanyang is a showcase of Chef Jereme Leung’s artistry of blending cultures and flavours of Southeast Asia through their connection to provincial Chinese cuisine.

Nanyang, meaning ‘South Seas’, traditionally represents the dispersion of Chinese communities who relocated and established themselves in Southeast Asia, blending their deep Chinese heritage with the diverse cultures they encountered.

Ignite the taste buds with an inventive amuse-bouche, Home-made Pickled Sarawak Sweet Pineapple & Kedondong. An integral part of China’s culinary history, pickling has been a common practice for centuries. The perfect starter to awaken the senses, it features a distinct tartness from the prominent Malaysian fruit well-loved in crafting preserves.

Navigate through a series of curated appetisers, including Foie Gras Terrine with Calamansi & Organic Perilla Plum, a sophisticated pairing that promises a dynamic contrast of flavours and textures, complemented by the tartness of the citrusy fruit native to Southeast Asia and the sweetness of the perilla plum; and Deep-fried Crab Roll with Malacca Shrimp Paste and Ipoh Guava Salsa, a succulent and savoury crustacean affair enhanced with produce of Malaysia, offering a textural contrast to the rich shrimp paste from Malacca and zesty notes of Ipoh’s Guava.

Tribute to the Hairy Crab season

Treasured during the autumn season in China, hairy crabs are a prized delicacy that can only be savoured for a limited time period. Coveted for their lusciously rich, golden roe, with exquisitely sweet, tender flesh, these freshly sourced furry-clawed crustaceans from Taihu are meticulously prepared with a blend of time-honoured and innovative Chinese culinary methods.

Till November 17, 2023, 藝 yì by Jereme Leung presents a multi-sensory experience featuring an array of refined and artistic adaptations through an assortment of new appetisers, main dishes, noodles, dim sum, and even desserts set to enchant the hearts of guests.
