
This month, Raffles Hotel Singapore blends the vibrant spirit of the streets with the refined elegance of heritage dining. Through two immersive culinary experiences — the return of Tiffin Room’s Street Food Festival and the second edition of the Regional Hawker Showcase at Raffles Courtyard — the hotel continues to honour the rich cultural tapestry of Asia’s most beloved food traditions.
Culinary pilgrimage through India’s bustling streets
From 7 to 20 July 2025, Tiffin Room presents its annual Street Food Festival, a celebration of provenance and flavour that pays homage to India’s diverse culinary heritage. Curated by Chef Kuldeep Negi, both the vegetarian and non-vegetarian menus are a sensory voyage through the bustling food streets across India.

Guests will savour elevated renditions of popular street food such as:
● Raj Kachori: A beloved street food delicacy from Rajasthan, this dish is a crisp, deep-fried shell generously filled with green lentils, black chickpeas, tangy tamarind chutney, sweet yogurt, and a medley of aromatic spices.
● Crispy Prawn & Masala Uttapam: Inspired by the bustling streets of Chennai, this South Indian classic is reimagined with a twist – fluffy lentil pancakes topped with golden, crispy prawns and served alongside a fragrant tomato-coconut chutney for a bold, coastal flavour profile.
● Seekh Kebab Roll: A North Indian favourite elevated with finesse – succulent grilled minced lamb wrapped in a flaky Malabar-style paratha, complemented by a refreshing white radish raita.
● Pav Bhaji: An all-time favourite Maharashtrian street food, this dish features a hearty, spiced vegetable mash served with pillowy-soft buttered bread, pickled onions, and masala chilli.
● Malpua & Mango Rabri: A traditional North Indian dessert of fluffy, crisp-edged pancakes infused with saffron, served with luscious mango-flavoured thickened milk.
Vegetarian and non-vegetarian menus are available at SGD 118++ and SGD 128++ respectively, with an optional wine pairing at SGD 88++.
Cross-border celebration of Southeast Asia’s soul food
The Regional Hawker Showcase at Raffles Courtyard returns in proud collaboration with Makansutra, celebrating the rich culinary tapestry of Southeast Asia through the lens of its most passionate food custodians.
From March to September, six hawkers from the region take centre-stage, each bringing with them an exquisite specialty in a week-long showcase designed to transport guests across borders and generations.


From 7 to 13 July, the spotlight shines on Jeffry Sie from Bandung, Indonesia, who brings back his signature Gudeg – a soulful jackfruit stew slow-cooked with over 25 spices and served with beef skin puffs, braised chicken, tofu, and sambal. This storied dish, rarely seen in Singapore and the most popular among last year’s Regional Hawker Showcase, offers a deeply comforting and aromatic experience that reflects the culinary soul of Java.


Later in the season, from 11 to 17 August, the spotlight moves to the vibrant streets of Malacca, Malaysia, where Wenila Nadarajan of Wen’s Kitchen presents a rare taste of Chitty Nonya cuisine – a unique culinary tradition born from the 17th-century fusion of Tamil and Malay cultures. As the only Chitty Nonya eatery in Malacca, Wen’s Kitchen offers a deeply personal expression of this heritage through a curated selection of dishes such as the Belimbing Ikan Telor (wild starfruit fish egg curry) and Grago Itam (fried krill).


The series concludes on a high note from 15 to 21 September, with a celebratory Filipino specialty from Chef Sau Del Rosario of Pampanga, widely regarded as the culinary capital of the Philippines. Guests will savour his signature Lechon, a whole suckling pig spit-roasted over charcoal until the skin is perfectly crisp and golden, and the meat tender and succulent. This festive dish is paired with Pinakebt, a traditional vegetable medley beloved by locals.
To elevate the dining experience, guests may enjoy two cocktails from Raffles Courtyard’s curated menu at SGD 20++, or explore a featured Riesling, handpicked from a selected wine region by the sommelier to delightfully pair with Asian dishes.
