Raffles Hotel Singapore's La Dame de Pic launches special summer menu with three-star Michelin chef Anne-Sophie Pic

La Dame de Pic at Raffles Hotel Singapore ushered in the summer with seasonal creations featuring the best of summer cuisines at the restaurant’s heritage space.

Three Michelin-starred Chef Anne-Sophie Pic’s newgastronomic creations will serve as a treat for guests upon the return of dining-in at restaurants in Singapore after Phase Two (Heightened Alert) was lifted in the city-state, an official release stated.

These 6-course Elegance and a 5-course Experience menus are available for lunch and dinner at La Dame de Pic.

The Elegance Menu includes Blue Lobster from Brittany, served alongside multi-textured Japanese daikon, sencha and yuzu accented sushi rice, and lobster bisque with genmaicha tea and Madras curry; and The Pigeon from Bresse, smoked and roasted pigeon breast marinated with gallium odorant and sobacha, and presented with dill condiment and fennel dauphine.

The Experience menu comprises Poularde de Bresse, marinated chicken with Ethiopian coffee and meadowsweet accompanied with Japanese peach cooked “a la plancha” and corn in different textures; and Sendai A5 Wagyu Beef, cooked over coals and marinated with laksa leaf and nasturtium, paired with baby leeks and baby onions, cedrat, black garlic and sesame paste.

The summer cuisines are available from June 29 to July 20, 2021 for lunch and dinner from Wednesdays to Sundays on reservation. After July 20, the opening days will change from Tuesdays to Saturdays.

The hotel announced it would be following enhanced safety and hygiene measures; restaurants have been reconfigured to facilitate safe distancing and there is a strict adherence policy in place to HACCP principles for food preparation and hygiene.
