Coveted for its golden roe and delicate sweetness, the hairy crab, sourced from Lake Taihu in China, which is nestled between the provinces of Zhejiang and Jiangsu, has returned this autumn to Raffles Hotel Singapore.

An Ode to Hairy Crab was unveiled at 藝 yì by Jereme Leung in October and the special menu is available up to 17 November 2025.

This culinary celebration captures the fleeting indulgence of this seasonal delicacy. It invites guests to discover a curated menu showcasing innovative renditions of these prized crustaceans across appetisers and cold dishes, main dishes and dim sum.

Key highlights include the Roasted Chicken Wings stuffed with Premium X.O Sauce & Hairy Crab Roe, where smoky succulence meets rich umami – delectable, delicately caramelised chicken wings are generously filled with rich, hairy crab roe and complemented with X.O. sauce.

The Sichuan-style Crispy Fish Maw stuffed with Shrimp Paste & Hairy Crab Roe offers a crisp, golden exterior that gives way to a rich, savoury filling, enhanced by the sweetness of the crab roe and a subtle, warming piquancy from Sichuan spices.

And the star dish would be the Baked Hairy Crab with Lemongrass & Garlic served with Rose & Ginger Tea, an aromatic centrepiece where tender, buttery crab meat is elevated by fragrant lemongrass and garlic, complemented with floral notes of rose and the gentle warmth of ginger tea.
